Today foodstuffs are available throughout the year, but there are still at least two excellent reasons to honour the seasons (lower cost and superior flavour) and so Dilwen divides the book into Spring, Summer, Autumn and Winter soups. There are some time-honoured favourites here like Scotch Broth and Hearty Winter Vegetable.
