The Japanese Kitchen by Kimiko Barber
Here is a mix of traditional and easy modern-day recipes for creating Japanese food. Kimiko Barber presents 100 essential ingredients used in Japanese cooking. Every ingredient has its own separate entry that covers history, appearance, manufacture, buying, storing, culinary use and health benefits.
Kimiko Barber left Japan for England in the 1970s and soon realised that she would have to rely on the culinary teachings of her grandmothers in order to survive. After gaining a First Class degree in Economics, she enjoyed a successful career in investment banking until a chance encounter with Books for Cooks, the specialist book shop in London, inspired a change of direction. Kimiko is now a much-in-demand, self-taught Japanese cook, demonstrating regularly at cookery schools all over the UK.
