He was fed them in childhood, he turned to curating their moulds and associated artefacts while director of York and Leeds museums, and he has made them for innumerable historical food shows and events. And jelly is a much bigger thing than some packet from the supermarket mixed with boiling water. In the first place, it was not factory-made gelatine that did the setting, but any number of ingenious adaptations of kitchen materials and ingredients. In the second, it was not just a simple clear, coloured solid, but an optical prism to show off and transform the foods contained within it. It was the cook's greatest resource for introducing colour, variety and delight into the table display. The book sketches in the history of jellies, particularly in England, and discusses their place within a meal; gives several recipes based on the various setting agents (carrageen, gelatine, isinglass) and also for cereal moulds (flummery, tapioca, semolina, rice, cornflour, etc.); describes how jellies may be assembled by layering, embedding, lining and inclusion of fruit, nuts, gold, etc.; and gives an excellent illustrated account of the various forms of jelly moulds.","brand":"WoB","offers":[{"title":"GB \/ VERY_GOOD \/ INTERNAL","offer_id":49536435224849,"sku":"GOR003020567","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ NEW \/ GARDNERS","offer_id":51295916622097,"sku":"NGR9781903018767","price":0.0,"currency_code":"GBP","in_stock":true},{"title":"GB \/ LIKE_NEW \/ INTERNAL","offer_id":51514913194257,"sku":"GOR014311299","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ GOOD \/ INTERNAL","offer_id":53405769564433,"sku":"GOR014908856","price":0.0,"currency_code":"GBP","in_stock":false}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/1903018765.jpg?v=1751028302"},{"product_id":"cooking-and-dining-with-the-wordsworths-book-peter-brears-9781900318471","title":"Cooking and Dining with the Wordsworths","description":"This wonderful book reveals a fascinating view into the home of William Wordsworth. This is a book for serious students and covers the period 1800-1920, during which time the life - very much including diet - of working people in Yorkshire was transformed by the industrial revolution. It opens with a survey of the various economic and social groups in the county, progresses to a study of cooking, fuel and installations, then concentrates in a series of single subject chapters on staple foods - porridge, oatcake, bread, meat, fish, puddings, and cakes. There then follow chapters on dairy products and drinks, and it closes with a folkloric survey of feats, fairs and calendar customers, and rites of passage such as head-washings, weddings and funerals. There are two appendices describing and supplying information about the contents of weavers' and miners' cottages.","brand":"WoB","offers":[{"title":"GB \/ VERY_GOOD \/ INTERNAL","offer_id":49539111092497,"sku":"GOR007215840","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ NEW \/ GARDNERS","offer_id":51412832813329,"sku":"NGR9781909248335","price":0.0,"currency_code":"GBP","in_stock":true},{"title":"GB \/ LIKE_NEW \/ INTERNAL","offer_id":53353681486097,"sku":"GOR011757572","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ GOOD \/ INTERNAL","offer_id":53430448652561,"sku":"GOR008110246","price":0.0,"currency_code":"GBP","in_stock":false}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/1909248339.jpg?v=1750803436"},{"product_id":"all-the-king-s-cooks-book-peter-brears-9780285638969","title":"All the King's Cooks","description":"The massive kitchens at Hampton   Court were built to supply the entire household of Henry VIII. It has never, as yet, been studied with an eye to the real mechanics of food production and service: the equipment used, the household organisation, the architectural arrangements for kitchens, store-rooms, pantries, larders, cellars, and domestic administration. This comprehensive work by Peter Brears, perhaps Britain's foremost expert on the historical kitchen, looks at these important elements of cooking and dining. A series of chapters looks at the cooking departments in large households: the counting house, dairy, brewhouse, pastry, boiling house and kitchen. These are illustrated by architectural perspectives of surviving examples in castles and manor houses throughout the land. There are chapters dealing with the various sorts of kitchen equipment: fires, fuel, pots and pans. Sections are then devoted to recipes and types of food cooked. The recipes are those which have been used and tested by Peter Brears in hundreds of demonstrations to the public and cooking for museum displays. Finally there are chapters on the service of dinner and the rituals that grew up around these. Here, Peter Brears has drawn a strip cartoon of the serving of a great feast (the washing of hands, the delivery of napery, the tasting for poison, etc.) which will be of permanent utility to historical re-enactors who wish to get their details right. The hardback of this book was first published in 2008. It is the first book in a mini-series by the author examining the history of cooking and dining in England.","brand":"WoB","offers":[{"title":"GB \/ VERY_GOOD \/ INTERNAL","offer_id":49629710254353,"sku":"GOR008127202","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ NEW \/ GARDNERS","offer_id":49735387939089,"sku":"NGR9781903018873","price":0.0,"currency_code":"GBP","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/1903018870.jpg?v=1750931324"},{"product_id":"traditional-food-in-northumbria-book-peter-brears-9781900318457","title":"Traditional Food in Northumbria","description":"This book offers an enticing mix of social and culinary history, discussion of culinary artifacts, excellent and well tested recipes, and informative and attractive line illustrations by the author. This book, over ten years in the writing treats a period in English history when new foods were being introduced from the New World, and new styles of cooking were being adopted from France and Italy. Uniquely, the author combines an account of the cookery with a close look at the practical arrangements, the kitchens and dining halls, where that food was cooked and consumed. His prose is enlivened by his drawings - as accurate as can be - which lay bare to the modern reader just what was going on in places like Hampton Court palace, as well as in humbler homes throughout the land. There are plenty of recipes for those who like to try things for themselves, all properly tested by the author, who is a historic food consultant to TV and country house owners.The era begins with the near medieval styles of Henry VII and VIII, with special attention to Henry VIII's propagandizing banquets and feasts for foreign monarchs; progresses to the reign of Elizabeth, the effects of new foodstuffs from America, and treats some the great houses of the Tudor aristocracy; and finishes with the first two Stuart kings, James I and Charles I under whose rule we began to move towards a more modern style of cooking and when we also started to produce cookery books in large number.","brand":"WoB","offers":[{"title":"GB \/ NEW \/ GARDNERS","offer_id":49736640102673,"sku":"NGR9781909248328","price":0.0,"currency_code":"GBP","in_stock":true},{"title":"GB \/ VERY_GOOD \/ INTERNAL","offer_id":52416629113105,"sku":"GOR006701098","price":0.0,"currency_code":"GBP","in_stock":false}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/1909248320.jpg?v=1751435814"},{"product_id":"cooking-dining-in-the-victorian-country-house-book-peter-brears-9781909248793","title":"Cooking \u0026 Dining in the Victorian Country House","description":"For centuries the food cooked in the country houses of Britain was the finest available, but during the reign of Queen Victoria (between 1837 and 1901), Britain experienced a period of development and expansion virtually unparalleled elsewhere or in any previous era. Based on technology and commerce, its home industries and Empire enterprises produced boundless wealth for the upper and middle classes, enabling them to adopt one of the most luxurious, ostentatious and materially rich lifestyles of all time. This was not only expressed in its fne arts, its architecture, its furnishings and its dress, but also in its tableware and food. The expansion of the empire and aggressive international trade in the Victorian period also meant that new ingredients became available for the first time. Today it is almost inconceivable that numerous families could aford to build, equip and staff a full-scale top-quality hotel restaurant purely for themselves, but this is what they did. It took an investment equalling hundreds of thousands of pounds in today's currency, but produced the quality of lifestyle that can now only be partially experienced in their modern equivalents, the top international hotels. Members of noble and gentry families were brought up to appreciate and demand the very best of domestic services. These included the produce of game, fsh, meat, cereals, fruits and vegetables from their estates and gardens, but went on to be demonstrated in the pristine whiteness of their fne linens, the high polish of their massive family silver, the correctness of their behaviour and manners, and especially the quality, favour and presentation of their meals. All of these, along with many other services were considered essential for the maintenance of their refned, cultured lifestyle. Establishing these standards before the introduction of modern laboursaving devices required the employment of a large, well-trained and experienced workforce. Not only was this a practical necessity, but it also served as a powerful visual representation of a family's wealth and status. With annual incomes well in excess of 40,000 a year, the wealthiest nobles and commoners often employed an indoor staf of thirty or more This great culinary tradition began its decline around the time of the First World War, and collapsed with the outbreak of war in 1939. Now, over eighty years later, it remains forgotten, as even those who experienced its final stages have passed away. Hopefully this definitive study will go a long way in reviving interest in it, and encouraging further appreciation and enjoyment of all its diverse aspects. Peter Brear's magnus opus is supplemented with numerous scale drawings of structures, fixtures and utensils, made over the course of over thirty years of his fieldwork working in historical houses.","brand":"WoB","offers":[{"title":"GB \/ NEW \/ GARDNERS","offer_id":49752643535121,"sku":"NGR9781909248793","price":0.0,"currency_code":"GBP","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/1909248797.jpg?v=1750931598"},{"product_id":"all-the-king-s-cooks-book-peter-brears-9780285635333","title":"All the King's Cooks","description":"A gift book for all seasons, for all interested in food: history, royalty and  recipes.","brand":"WoB","offers":[{"title":"US \/ GOOD \/ SBYB","offer_id":50232388550929,"sku":"CIN0285635336G","price":0.0,"currency_code":"GBP","in_stock":false},{"title":"GB \/ GOOD \/ INTERNAL","offer_id":50262658253073,"sku":"GOR003666439","price":0.0,"currency_code":"GBP","in_stock":true},{"title":"GB \/ VERY_GOOD \/ INTERNAL","offer_id":52108248547601,"sku":"GOR001572574","price":0.0,"currency_code":"GBP","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0784\/4072\/6801\/files\/0285635336.jpg?v=1751133337"},{"product_id":"petworth-book-of-country-house-cooking-book-peter-brears-9781909248434","title":"The Petworth Book of Country House Cooking","description":"Petworth House has been the home of the Leconfield family since it was granted to them by Queen Adeliza, the second wife of Henry 1, in 1150. From the Middle Ages it included Europe’s largest medieval cathedral at York, England’s most complete monasteries at Kirkstall and Fountains abbeys, its collegiate churches of Beverley, Howden and Ripon, and great Norman keeps at Richmond, Conisbrough and York’s Clifford’s Tower. After the Dissolution of the Monasteries, most major new buildings were domestic. Heath Old Hall, Burton Agnes and Pontefract New Hall were built to sophisticated Elizabethan and Jacobean designs, followed by smaller, provincial halls of the seventeenth century. From about 1700, some of Britain’s finest great houses such as Wentworth Woodhouse and Castle Howard were constructed in Yorkshire. This great architecture attracted the attention of John Buckler and his son John Chessell Buckler, contemporaries of J.M.W. Turner. Between 1804 and 1820 they made a remarkably comprehensive graphic record of hundreds of the county’s finest and most interesting buildings, many now lost and forgotten, as part of a body of work that took them across England and Wales. Now, for the first time in more than two hundred years, this book makes a large selection of these drawings readily available, accompanied by an engaging narrative. Bucklers’ Yorkshire Buildings provides an invaluable resource for all those interested in Yorkshire’s architectural legacy.","brand":"WoB","offers":[{"title":"- \/ - \/ INTERNAL","offer_id":53499630321937,"sku":null,"price":0.0,"currency_code":"GBP","in_stock":true},{"title":"GB \/ NEW \/ GARDNERS","offer_id":53499630420241,"sku":"NGR9780901869548","price":0.0,"currency_code":"GBP","in_stock":false}]}],"url":"https:\/\/www.worldofbooks.com\/de-de\/collections\/autor-buecher-von-peter-brears.oembed","provider":"World of Books ","version":"1.0","type":"link"}
