Only the Best by Michel Roux

With more than 30 years experience as a chef at the top of his profession Michel Roux has garnered a vast wealth of culinary knowledge and expertise. Over time his style of cooking has gradually evolved from the classic French cuisine of his Parisian apprenticeship to a lighter, healthier approach, more in keeping with contemporary tastes. Along the way, the impact of modern technology and the subtle influences of global travel have also made their mark. In Only the Best, Michel applies his tremendous talent to creating a compendium of essential culinary techniques whilst at the same time producing an innovative collection of over 130 recipes easily achievable at home. Stunning photographs clearly illustrate both the technique and the finished dish.
For 25 years Michel Roux has been chef-patron of the Waterside Inn at Bray, one of only three Michelin three-starred restaurants in England. He is the first and only chef in Britain to be awarded 3 Michelin stars and hold them for 17 years. He is ranked ninth in Michelin's hierarchy of the best chefs in Europe. Michel has written several books, including Sauces, published by Quadrille, which won the Glenfiddich Visual Award and has sold over 200,000 copies, and has just been awarded the Chevalier of the Legion d'Honneur for his services to gastronomy
