Smoothies by Tracy Rutherford

Smoothies, shakes and frappes are a great way to consume fruit in a drink as all the flesh is used as opposed to juices, which leave the fibre behind. By adding nuts, yoghurt, spices and other healthy additives, they become a nutrient-dense, delicious treat to boost general health and vitality. All recipes in this book can be used with dairy-free soy, rice or oat milk, and can be thickened with soy yoghurt, sorbet or nuts for a dairy-free diet. The text also includes information on preparing, storing and freezing fruits as well as indulgent recipes for decadent and spirited smoothies - their flavour combinations inspired by classic desserts such as Black Forest and tiramisu, and classic cocktails such as the daiquiri and the Bloody Mary.
Tracy Rutherford has been working in the food industry since the early 1990s. She writes recipes and articles for cookbooks and magazines as well as preparing food for photography and food editing. As an organic gardener and certified organic fruit and vegetables grower on the east coast of Australia, she works with local health food shops to provide customer with natural food that maximises the health and benefits of fruit and vegetables.
