In keeping with its contemporary twist on authentic Thai cuisine (sometimes based on western ingredients), Rosa's Thai Cafe celebrates traditional Thai cooking techniques and features over 100 recipes, including dishes from the menu at Rosa's as well as family favourites and regional dishes from founder Saiphin Moore's regular trips back home. Recipes range from the aromatic Beef Massaman Curry to the Soft Shell Crab Salad, Larb Spring Rolls, homemade Sriracha Sauce and Mangoes with Sticky Rice.

About Saiphin Moore

Saiphin grew up on a mountain farm in Khao Kho, Northern Thailand, where she learned to cook with ingredients brought straight from field to wok. When she was 20, Saiphin moved to Hong Kong as a nanny where she spent the next 18 years cooking endless family meals and dinner parties, fitting catering jobs around her babysitting duties. Shortly after meeting Alex in 2001, she set up her own Thai takeaway and later a sit-down restaurant named Tuk Tuk Thai. The pair lived in Hong Kong for 6 years, before selling the restaurant and moving to London together in 2006. Rosa's Thai Cafe Founded by Anglo-Thai husband and wife team Alex and Saiphin Moore, Rosa's is a Thai cafe group that has grown from a street-food stall in Brick Lane in 2008 to 11 London restaurants (Soho, Spitalfields, Angel, Carnaby Street, Islington, Brixton, Chelsea, Victoria, London Fields, West Hampstead & Stratford) today.
