San Antonio is the second largest city in Texas, but manages to be as sophisticated as any big city while displaying the steamy allure of the tropics. The dominant culinary influence is Spanish--the first residents arrived in 1731 from the Canary Islands, the Spanish archipelago off the northwest coast of Africa. San Antonio bears the visual stamp of its Spanish heritage in the lovely missions and architecture; and it is no surprise that you find these gracious influences in restaurant menus and on tables throughout the city.

San Antonio's classic desserts include sopapilias, churros, conchas, and frescas, among others--a lasting tribute to the thriving Mexican culture in this beautiful city. Of course, there are other peoples that helped form this central Texas cuisine--immigrants from Germany, Ireland, France, and other distant countries all brought their favorite recipes to this new land.

A Texas-based food writer and editor, HELEN THOMPSON has written for and edited such publications as Metropolitan Home, Renovation Style, TRIBEZA, Veranda, Country Home, Tradi-tional Home, Elk Decor, Architectural Digest, InStyle, and Texas Monthly. Thompson served as the managing editor of Domain, Texas Monthly's lifestyle magazine, and wrote about food, architecture and interiors, travel, and new products. The author of nine books, including Pelican's Dallas Classic Desserts and The Big Texas Steakhouse Cookbook, Thompson lives in Austin, Texas.

Born and raised in Texas, JANICE SHAY is an author and book packager producing illustrated books, children's books, and cookbooks. She has served as a graphic consultant for Texas Monthly magazine and has won scores of awards for her designs. Her other titles include St. Patrick's Day in Savannah, Charleston Classic Desserts, Savannah Classic Desserts, Savannah Classic Seafood, and The Big Texas Steakhouse Cookbook, all available from Pelican. Shay lives in Savannah, Georgia.
