His own restaurant, Peacock Alley in Dublin, was awarded a Michelin star and in 2002 he opened Traffic Bar and Lounge, in New York to great acclaim, hosting the MTV Awards party there. He owns and operates Salon Des Saveurs in Dublin, Ireland's only tasting menu restaurant and Conrad's Kitchen in Sligo as well as being Managing Director of Geisha Wok and Noodle Bar in Cape Town.
