Fragrance of the Earth - Lebanese Home Cooking by Nada Saleh
This cookbook contains a selection of recipes, as prepared in Lebanese homes, that are also suitable for today's health-conscious public. Accompanied by full-colour photographs and wood engravings, the text is full of health tips and informative anecdotes about ingredients, dishes and the culinary tradition of Lebanon. Meals in Lebanon are a relaxed affair. The wide variety of starters (mezze) range from a cracked wheat salad to a pumpkin dip, and may be accompanied by a glass of anisette or arak. This might be followed by charcoal-grilled chicken or fish with almonds, and finished off with honeyed pastries and plates of seasonal fruits.
