Moroccan food is probably the best-known of all North African cuisines, with Moroccan restaurants proving hugely popular with their atmospheric lanterns and heady cooking scents. Popular dishes include tagines and couscous, kebabs and roasts, fragrant salads, zingy vegetable dishes, mint tea and deliciously sweet pastries. Harissa - a vibrant and hot spice mix - is used extensively and the food is packed with flavour without containing too much fat. The recipes included in this book are traditional, but not overly complicated, and all ingredients used in the recipes can be purchased at most large supermarkets.
