Susan Parkinson a home economist and dietitian, worked in New Zealand and England before gaining a Masters degree in nutrition at Cornell University, USA. She has lived in the South Pacific for over 40 years where she has been involved in developing Fiji and regional nutrition programmes. She has been involved in the Publication of five books including Taste of the Tropics and Pacific Islands Cookbook, both with Peggy Stacy. Peggy Stacy is a qualified dietitian trained in Canada and the USA. She is a member of the Australian Dietetic Association and the Nutrition Society. She is the author of Living with Diabetes and has been the co-author of numerous other books. Adrian Mattinson has built up wide experience in hotel and food management since graduating from the Scottish Hotel School. He spent four years in Fiji, partly as Head of the School of Hotel and Catering Services in Suva, and partly running a group of four hotels. He was co-author of Taste of the Tropics with Susan and Peggy.
