The revival of Irish farmhouse cheesemaking, dating from as recently as the late 1970s, has inspired a wide range of cheeses which have won international acclaim, and have played an important part in the food culture boom in Ireland. This book contains some 70 simple easy-to-cook recipes using Irish farmhouse cheeses. Many of the recipes are the cheesemakers' own favourites. There are also recipes by chefs and the author. This is the first book entirely devoted to recipes for Irish farmhouse cheese. There is also a list of shops and supermarkets stocking Irish farmhouse cheese in Ireland and the UK. The book has been sponsored by Bord Bia - the Irish Food Board.
Jane Russell grew up in County Tipperary, where she first developed her long-standing interest in food and cookery. She worked in the London book trade for several years but now lives in West Cork.
