Jill Norman established the food and wine list for Penguin Books before becoming an independent publisher and consultant. Her books include The Complete Book of Spices, which won the Andre Simon prize, the Glenfiddich trophy and the IACP award for a reference work; The New Penguin Cookery Book and Herb & Spice, awarded a prize by the German Academy of Gastronomy. She has also updated Encyclopedia Britannica's entries on herbs and spices. She has travelled widely, making frequent visits to Australia and the US, and spending time with the EC Patent Commission. Wherever she has been she has gathered inspiration for the recipes in this book.
