ANNE WILLIAM'S FRENCH RECIPES by Anne Willan
One of a series of personal recipe collections from the four most popular cuisines in the world. The series has been written by highly respected cooks - Madhur Jaffrey, Ken Hom, Antonio Carluccio and Anne Willan - each specialists in their respective cuisines and responsible for spreading the techniques of foreign cooking to British homes. They are small handbooks for practical use in the kitchen, each a source of authentic himecooking, recipes gathered from culinary tours of each country. With an accessible design the recipes are easy to follow, organised by course or type of dish through from starters to desserts, and followed by a comprehensive glossary of basic ingredients or techniques. Each has the personal stamp of the author, with their expert advice on how to perfect the dish, and informative notes on its regional or historic origin.
James Beard award-winning author Anne Willan is one of the world's leading authorities on cooking and one of only a handful of people to have won the prestigious Lifetime Achievement Award from the IACP (1999). She is the founder of the French cooking school La Varenne and is the director of the branches in Burgundy, France and at the Greenbrier Resort in West Virginia, and in 2000 she was named Cooking Teacher of the Year by Bon Appetit magazine. Willan's food writing has appeared in countless publications such as the Washington Post, and she is the author of cookbooks including French Regional Cooking, Chateau Cuisine, the classic La Varenne Pratique, the 17-volume Look and Cook series, and most recently, The Good Cook.
