It is believed that beer has been produced, in some form, for thousands of years - the ancient Egyptians being one civilization with a knowledge of the fermentation process. Beer production has seen many changes over the centuries, and Brewing combines both an historical look at the process with some up-to-the-minute developments. Following a successful career in academia as a Senior Lecturer and Head of Microbiology at Anglia Ruskin University, Ian Hornsey decided to concentrate on brewing. He co-founded and directed the Nethergate Brewery from 1985 until in 1999 oral cancer forced him to retire and take to writing about the science behind the brewing industry. Now a regular contributor to The Brewer & Distiller International, What's Brewing, and other trade publications, he has also written several best selling books.
