Casseroles by Sonia Stevenson
From the American gumbo to the French coq au vin, from the Moroccan tagine to the curries of Thailand - the casseroles of the world appear in many and delicious guises. Here are 50 of the world's great comfort dishes, plus special sections on how to prepare basic stocks, basic cooking techniques and methods of spice preparation for various cuisines. She has chosen recipes from all over the world - America, Europe, Africa and the Middle East India, the Far East, South-east Asia, Australia and New Zealand.
Sonia Stevenson is one of the great chefs of Britain and her restaurant, the Horn of Plenty in Devon, won huge accolades. She was the first woman chef in the UK to be awarded a Michelin star and now teaches enormously popular cooking courses in Britain and Europe. She has a number of books to her name, including The Magic of Saucery, which was short listed for the Andre Simon Award. She appears regularly on television food programmes, and is one of the judges on BBC TV's Masterchef.
