Cooking with Flowers by Jekka Mcvicar

Jekka McVicar, expert herb grower and best-selling author, examines 50 flowers, with tips on how to grow them in your garden, or in containers, and when to harvest. Showing which parts of the flowers are the tastiest and which should be removed, Jekka provides at least 2 recipes for each flower. From Chamomile to Sweet Violets, the 100 recipes include such delights as Rosemary and Tomato Soup, Green Thai Chicken Curry with Citrus Flowers and Rice and Summer Pudding with Rose Acacia Flowers. There is also expert advice on the making of flower oils and vinegars, preserving flowers in the form of butter or sugar and drying them at a later stage.
This seems a natural progression for famed organic herb-grower Jekka McVicarFrom aromatic leaves to the flowers, this is a fascinating look at the centuries-old tradition of adding flowers and petals to food. Often with just as much flavour as leaves, they add a distinct piquancy and prettiness to dishes as diverse as salads, cakes and roast meats. Charmingly illustrated with the colourful photographs of Derek St Romaine, the pictures convey the delicacy of the flavours imparted by the blue lavender, the fiery orange of nasturtiums, the golden calendulas and the pretty pink bergamot. Recipes are innovative and occasionally daring - gooseberry and borage flower fool, honeysuckle buns, red cabbage and fennel flowers and stuffed courgette flowers - all imparted with easy-to-follow recipe instructions and, with each flower discussed, the propagation and cultivation details of the particular plant. This is an excellent book, highlighting herbs many talents in both kitchen and garden. -- Lucy Watson
