Granita Magic by Nadia Roden
Granita "the original ice cream" predates sorbets and ice creams by thousands of years. Unlike ice cream (made with cream) or sorbets (made with egg whites) granitas (a form of frozen, flavoured ice that looks and feels like icy snow with sparkling colour) couldn't be easier to make or more delivious to eat. Using only a shallow baking dish and a fork, along with only four or five ingredients, Nadia Roden has created granite combinations that are as interesting as they are playful: They include star anise and grapefruit, chocolate and orange juice, lemongrass and coconut milk, lavender and honey, and tequila with lime, mint and cucumber. Roden suggests serving granita anytime of the day - for breakfast, along with a brioche, in between courses during dinner, for dessert, and, when made with wine and spirits, the perfect adult frozen treat.
