Acorn Vegetarian Kitchen, the author's restaurant, will be listed in the Michelin Guide 2018, making it one of only three plant-based restaurants in the country and one of only two to be listed in both the Michelin Guide and The Good Food Guide. The restaurant is generally rated as one of the best vegetarian restaurants in the UK and the world because it places vegetables at the center of the plate. Richard grew up as a vegetarian and went on to learn veggie cookery while working in a number of famous vegetarian restaurants after graduating with a degree in English Literature. His five-year stint as head chef at Demuth's Restaurant culminated in the development and refinement of his plant-centric cooking approach. He is passionate about passing on the skills and knowledge he has gained over the years in order to raise the overall standard of vegan cooking in the United States.
