Karen Jean Matsko Hood has always loved to cook, bake, and try out new recipes. Karen is now working on a series of cookbooks that combine her cooking and entertaining abilities and experience. Hood appreciates entertaining big groups of people, and she particularly enjoys creating imaginative dishes with holiday, international, ethnic, and regional themes. Hood is releasing the Cookbook Delights Series, a cookbook series in which each book focuses on a different food item or topic. Apple Delights Cookbook is the first book in the series.

On various issues, she has been invited to appear on talk radio shows, and beloved recipes from her cookbooks have been prepared on local television shows. Karen grew up in Great Falls, Montana, where she was born and raised. She graduated from Gonzaga University in Spokane, Washington, with a Master's Degree in Pastoral Ministry in May 2001. Hood is completing her Ph.D. through working on research projects.

Gonzaga University in Spokane, Washington, offers a degree in Leadership Studies. She, her husband, and many of her younger sixteen children live in Liberty Lake, Washington. Cooking, baking, collecting, photography, indoor and outdoor gardening, farming, and the cultivation of unique flowering plants and orchids are just a few of her interests. Hood has a deep love for the environment and a deep regard for all living things.
