An introductory chapter defines Central Asia in time, place and ecology. The following chapters relate Central Asian history to the eight world institutions, whose development, it is argued, constitute world history in the proper sense.

Raquel Pelzel is an award-winning food writer and cookbook collaborator who most recently worked on Broken Breads with Uri Scheft. She's a cookbook columnist for Epicurious and has authored recipes for Saveur, Wall Street Journal, Every Day with Rachael Ray, and Edible Manhattan. She worked as an editor for Cook's Illustrated and for Tasting Table as a senior food editor and test kitchen director. She is a Brooklyn resident.
