Falling into a career as a butcher in a small Australian country town, Troy Wheeler moved to Melbourne and climbed the ranks to become one of the city’s best butchers. In 2015, he launched Meatsmith with Andrew McConnell, creating one of Australia’s best bespoke butcher and grocery stores focusing on quality heritage meats, sauces, charcuterie and meals. There are now four Meatsmith stores in Melbourne: the original Fitzroy flagship, plus St Kilda, Balwyn and Brighton.
