Compiled and edited by Rose Elliot, who herself contributes over 20 of her favourite recipes, this book is a collection of original vegetarian dishes which include guacamole, Mexican pepper casserole and Sudanese peanut soup. Divided into 8 chapters, the book includes recipes for every occasion, from starters and soups to main-course rice and pasta dishes, tea-time treats and desserts. All the recipes have been tested and the ingredients are readily available. Royalties from the sale of this book are paid directly to Oxfam.Rose Elliot, MBE, was raised in a spiritual household. Grace Cooke, her grandmother, was White Eagle's medium and formed the White Eagle Lodge based on his teachings, which had a significant Buddhist element. Rose eventually grew interested in the teachings of a variety of New Age authors, particularly Louise Hay, Wayne Dyer, and Doreen Virtue. Rose once heard a Buddhist monk talk about the Four Noble Truths and how everything you need to know about Buddhism could be written on the back of a postcard... Her meditation practice, writing, and interest in Buddhism were all influenced by this.
