The Poppy Orchard by Mary Withall
Stephen Beaton qualifies as a doctor shortly before the outbreak of WWII, and gains his pilot's license at the same time. When he is sent to a front-line airfield as a medical orderly he is frustrated at being neither able to fly, nor having any challenging medical cases. However when his comrade Digger is badly burned in air crash it emerges that Stephen has a talent for plastic surgery, and he is posted to a severe burns unit in Kent.
