Nobu Vegetarian Cookbook by Nobu Matsuhisa

Nobu's restaurants are known the world over for the quality of their ingredients and for the skill and originality with which the food is prepared and presented. Now, in this first cookbook by Nobu to focus on vegetable dishes, the master chef shares his expertise and deep knowledge of Japanese cuisine in sixty recipes that showcase vegetables in all their variety. Throughout the book, the emphasis is on fine and healthy Japanese dining. Nobu uses a wide range of cooking techniques--from marinating and pickling to steaming, roasting, boiling, frying, grating, etc.--to bring out the full flavors and textures of the vegetables. He also introduces tofu and yuba, both traditional Japanese ingredients made from soybeans, and offers ten recipes for vegetable sweets and fifteen for cocktails.

NOBU MATSUHISA was born in Japan and received classical training in a sushi restaurant in Tokyo before moving to Peru. Following that, he traveled to Buenos Aires, Alaska, and Los Angeles, where he opened Matsuhisa in 1987. In 1994, he co-founded Nobu with actor Robert De Niro in New York City. Chef Nobu was designated one of Southern California's Rising Stars by the Los Angeles Times in 1998, and he was inducted into the James Beard Foundation's Who's Who of Food and Beverage in America in 2002, as well as nominated for Outstanding Chef in 1997, 1999, 2000, 2001, 2002, 2003, and 2004. There are 22 Nobu Matsuhisa restaurants in more than 10 cities around the world, including 12 in the United States.

Before joining Nobu Miami, THOMAS BUCKLEY worked with Daniel Boulud, Ferran Adria, and Jean-Georges Vongerichten. He's an executive chef who uses his understanding of local ingredients to not only interpret his master's food, but also to add his own originality to the kitchen. For his photographs in Kodanshas Kaiseki: The Magnificent Food of Kyotos Kikunoi Restaurant, photographer MASASHI KUMA was nominated for a James Beard Award.
